Here’s a recipe for preparing Kekefiyai, an Ijaw delicacy:
Ingredients:
●4 fingers of unripe plantain
●2 tablespoons of blended crayfish
●1 medium-sized onion, diced
●4 medium-sized fresh peppers, blended or diced
●1 big dry fish
●2 Knorr cubes
●A handful of scent leaves
●Half cup of palm oil
●Half cup of periwinkle (optional)
●Salt to taste
Cooking Instructions:
- Wash, peel, and dice the plantains, then set them aside in a bowl.
- In a medium-sized pot, add enough water to cook the plantains and allow it to boil.
- Pour the diced plantains into the pot of boiling water and cook for about 10 minutes.
- Add the blended peppers, crayfish, Knorr cubes, diced onions, scent leaves, dry fish, periwinkles (if using), salt, and palm oil to the pot without stirring. Cook for an additional 10 minutes or until the plantains are soft.
- Stir the ingredients together and then simmer under low heat for about 2 minutes.
Your Kekefiyai is now ready to be served!
